The second step to cooking this delight snack is to heat the vegetable oil in a medium skillet as you are preparing the salmon croquettes. In a bowl, combine the salmon, egg, flour, diced onion, salt, and black pepper. Stir until mixed well. Create a patty of the salmon mix (similar to a hamburger). Place salmon croquettes in the heated oil until browned on both sides. Cook a little longer for desired crisp. When salmon croquettes are removed from the heated oil place the salmon croquettes in a strainer to drain, or on top of paper towels on a plate, or on a brown paper bag to absorb the oil from the salmon croquettes.
